Quick and Healthy, 5 Minute, Microwave, Lemon Blueberry Mug Cake! In a large mug, Add Three (3) Tablespoons Organic Coconut Flour Add one half (1/2) Teaspoon of Baking Powder Add a Pinch (about 1/8 Teaspoon) of Salt Add one half (1/2) Teaspoon of Lemon Zest Add One (1) Tablespoon Unrefined, Virgin Coconut Oil Add Two (2) Tablespoons Raw Honey Add one half (1/2) Teaspoon of Vanilla Extract Use a fork to stir to combine ingredients evenly. Add One Third (1/3) Cup of Almond Milk Use a fork to stir to combine ingredients until smooth and even Add One (1) Large Egg Add One (1) Tablespoon of Lemon Juice. Stir to combine until mixture is smooth The mixture should be a thick, lava-like consistency Add Two (2) Tablespoons of Blueberries Stir to combine evenly Place mug on a plate to prevent over flow and transfer to Microwave Microwave on High Setting, Set Cook Time for 2:30 (Times May Vary Depending on Microwave), Watch your cake rise!=) Microwave times will vary. Your cake is done once it reaches its peak height and stops rising or starts to sink back down. Your cake will naturally deflate or sink back down when you remove it from the microwave.
