How to Make Royal Icing – Gemma’s Bold Baking Basics Ep 30


Hi Bold Bakers! Royal Icing is an important recipe that I
want you to have in your repertoire. It is used to decorate cakes, cookies, and
even gingerbread houses. It’s really easy to make, and I’m going
to show you how. We’re going to start out on our kitchen
mixer. Into the bowl, we’re going to add some room
temperature egg whites. Then we’re just going to turn on the machine
and whip them up for a minute or two until they get foamy. Once it’s foamy like this, we’re going
to add in some lemon juice, and then very slowly, while the machine is on medium speed,
we’re going to add in the sugar, bit by bit, until we get the consistency that we
want. Once all your sugar has gotten in there, go
in with your spatula, and scrape down any dry sugar that is around the sides of the
bowl. So this is also a really good time to check
the texture of your frosting. Now, this is great for “flooding,” if
you’re decorating cookies. But maybe if you’re making like a traditional
Irish Christmas cake, or something like that, you may want to add in a little more icing
sugar to it even thicker. But this is perfect for us. I used this royal frosting to decorate cookies
