Welcome to Ape Amma Youtube channel. Last year I showed how to make a Christmas cake without an oven, today this cake is made in an oven and double the size of my last cake. These are the fruits we need. we need the juice of 1 orange , you can use brandy or wine. these are our spices, we need to grind this to a fine paste. this is how the nutmeg seed look like and we have to use this part. Then I’m chopping up all these large dried fruits to a smaller pieces my sultans are quite big too, so I’ll chop them up as well. Now I’ve chopped all the fruits we need a large bowl when making the cake. Now we have to grind the spices. I’ve taken exactly 1 tbsp of spices Now add the juice of 1 orange as well. Now mix everything well. now when you cover these fruits and leave it, the fruits will automatically form alcohol …even if you don’t add any alcohol, but if you have brandy or wine, it’s better to add it. So I added 1/4 cup of homemade wine. I’m going to leave this for 5 days, but if it’s urgent you can even do this in 1 day now this is after 5 days. we are going to bake the cake. This tray is 12″ in length 8″ inches in width 2 inch in height let’s see how we are going to prepare the cake tray, since this has a lot of fruits. I’ve showed this method before in my wedding cake video recipe There are 6 papers here because this is a cake with lot of fruits the bottom can become caramelized if you don’t add 6 layers of paper. then you have to add the parchment paper above them. if you add clips like this it’s easy to keep the paper in place. Now apply some butter over the parchment paper. Now let’s make the cake mixture. These are the ingredients. make sure all equipments are dry when beating egg whites. it’s best to beat the egg whites first because if you do the egg yolks then you have to wash and clean the beater again. you don’t need to beat it to form stiff peaks, soft peaks is enough for this. now cover and keep it aside now beat the butter and sugar. now add 1 egg yolk at a time and beat them now add the honey and all other essence in the recipe. when you buy lemon choose the ones that have a thick peel. this is my fruits mixture after 5 days, there is a great aroma now. add it to the cake mixture, now add semolina little at a time. this isn’t roasted semolina, roasted semolina would give the cake a dry texture. Now you have to fold in the egg whites. I’m also using some of the egg whites left at the bottom of the bowl too. don’t overwork this. Because only this egg white will give the volume of this cake Now I’m baking this cake in a 150 Celsius preheated oven. I baked this for 1 hr 40 minutes, I did the toothpick test and it’s clean so our cake is ready. the cake is very hot now and I’m removing all the extra papers. I’m not going to sit this cake in the baking tray for a long time because it’s how, so I’ll quickly flip it to a cooling rack. see our cake is baked very nicely with the golden brown color. now I’m going to let it cool down completely. once it’s cooled I’m placing it back in the tray. I’m pouring a bit more of wine here. if you make the cake few days ahead you can poke some holes with a toothpick and pour some brandy or wine over the cake, it will keep the cake very moist for days. Now you can serve this like this too, else you can cover it with marzipan icing. So let’s see how to make the marzipan icing. check the recipe for measurements. you can either use wine, brandy or lime juice here. prepare the board so you can flatten the icing. now mix the icing sugar and cashew powder using your hands add few drops of almond essence to egg whites then add 1 tsp of wine you can either use brandy wine or lime juice to the egg whites add little at a time and make a paste. make the mixture so it doesn’t stick to your fingers I’m going to make 2 cakes from this. now roll the icing and use the rolling pin to lift it. and place it over the cake. remove the excess if there are any holes, just cover it with the icing. now over cake is ready see how easily this slices if you show this list to a shop they will give you all the fruits separately so it’s a very easy task to do. Now even you can make a high quality Christmas cake or a wedding cake at home. even the wedding cake is same as this. you can keep this cake for about 6 months without the icing. it’s better if you can feed this cake with brandy/wine each 2 weeks if you want to keep it for a long time. so you only can make this Christmas cake and share it with everyone.
